A common mistake people make when trying to clean their carpets is using too much water. Too much water prevents soil from absorbing into the carpet. The excess water creates a muddy mixture that makes the dirt hard to clean. When you're cleaning your carpets, use a combination of a vacuum, a sponge mop and a spray bottle. First, vacuum your carpets to remove as much soil as possible. Then, use the sponge mop and a mixture of water and cleaning product to scrub the mop over the carpet. Finally, spray the carpet with a mixture of water and vinegar, which helps to remove any soap residue.

Have you ever used a Bissel SC or the old Kenmore Power Spray extractors? They are set up like a commercial carpet cleaner with a hot water spray bar that sprays a mixture of hot water on the carpet with some cleaning solution and a triangular vacuum nozzle that suck the water right up. The old Kenmore has a carpet attachment called a Spraymate that has a rotating brush like a conventional power nozzle but it is waterproof and has a built in nozzle to spray your mixture of hot water and cleaning solution. There is a trigger on the top of the wand that lets you control the flow of water to the carpet. The vacuum is strong enough that you can get the carpet fully wet and it will suck the water and dirt out leaving clean damp carpet that air dries in a couple of hours. Something like a Bissell Big Green does much the same thing but in a single integrated unit with less water capacity. Another way is to scrub the carpet with a mixture of hot water, vinegar and some alcohol, then suck it up with a big shop vac. Rinse with fresh water and suck that up. A shop vac with the right attachment can suck the carpet nearly dry and will extract the dirt with the water.

We're talking about something someone may own and store in their home. Sure one can always call a professional carpet cleaner with a truck mounted system but they cost a lot of money, all the furniture has to be moved and then you have to wait for whole rooms to dry before moving the furniture back. It is too disruptive for a busy family. Most of us what to be able to clean up the little messes our kids and doggies leave on our carpets with something stashed in the hall closet or out in the garage. I think to answer the question at hand is that the amount of water used isn't as important as having a powerful enough wet vacuum, whether a wet/dry shop vac or dedicated carpet extractor, to get the water out of the carpet.
